I find this quick, crockpot chili to be delightful especially on a cold day! Over the years, I’ve seen it served in a variety of ways. The classic way is on a hotdog or the daring way with apple sauce (Hi, to my northern friends). Either way, chili is a comforting meal meant to shared. It can be stretched with a carb (like pasta or rice) or even altered to make it vegetarian or vegan. (More tips below)
At the time of writing this, I need to go grocery shopping and am almost out of fresh produce. This is the chili you make when you want to be warmed up with something flavorful on a 20° day, need something low effort, and you have to use the last few items in my fridge. It is simple yet Delicious.
How to Serve this Crockpot Chili
You can garnish this chili is a variety of ways! It is so versatile.
Avocados: Avocados are so creamy and would pair nicely with the warm, comforting flavors found in chili.
Cheese: If you are dairy free please omit, otherwise mild or sharp cheddar is a great choice.
Sour Cream: My sister’s Favorite topping
Chips: Salty and Crunchy (not healthy by any means but still delicious)
Cornbread: I love cornbread and would eat it with anything!
Crisp Salad: The light, crisp salad would juxtapose perfectly with chili.
Apple Sauce: It’s a Northern thing that I was introduced to at work and is surprisingly good! Thanks Renee!
Vegetarian and Vegan Alterations
Omit the meat and throw in the vegetables of your choice! Keep your eyes peeled for a Vegetarian chili coming soon!
Some things that I like to add are celery, onion and carrots and sauté those in olive or avocado oil for a few minutes (until onions are translucent)with some chili seasoning before tossing in the crockpot.
Since these vegetables will still have some water left in them I would decrease the amount of water/vegetable broth slightly.
The Recipe for this Simple Chili:
Time to Prep: 10 minutes
Time to Cook: 2-4 hours
Ingredients:
1/2 of a large onion chopped
1/4-1/2 red bell pepper
1/2-1lb of ground beef or turkey
1-2 tablespoons of a homemade chili seasoning mix- will h
2 cans of beans-drained and rinsed (I like black, pinto and dark/light kidney beans)
A dash of Worcestershire sauce
2 cans of crushed tomatoes
1 cup of water or chicken broth
Instructions:
- Cook your onions until translucent in a pan.
- Add Beef to the pan and cook until cooked through.
- Grab your crockpot add in one can of crushed tomatoes and then layer in the chopped carrot, beef or turkey mixture, 2 cans of beans, Worcestershire sauce, water/chicken broth and the final can of crushed tomatoes.
- Season to taste. Then mix all of the ingredients in your crockpot until they are seasoned.
- Cook on high for 2-3 hours stirring every hour if you have the time.
