My recipes (when they include meat) normally have suggestions for my vegetarian and vegan readers at the bottom. This recipe is different, it is a vegetarian recipe at it’s base… no meat! Here is my fresh take on a meatless lasagna the time it takes is definitely worth the wait.
Meatless Lasagna…
This recipe doesn’t include any meat (No pork or beef). I didn’t substitute the meat with anything specifically in this recipe.
What Makes This Lasagna So Fresh?
This lasagna features onions, bell peppers, garlic and spinach. A variety of items that make me think of a sunrise peeking over a grass topped hill… so peaceful, yet exciting.
What to Serve With Lasagna?
This lasagna is pretty filling on it’s own. Some things that would pair well with this pasta are a salad, artisanal bread loaf cut into slices and topped with a Parmesan garlic butter, roasted broccoli topped with avocado oil, parmesan and seasonings.

The Veggie Filled Lasagna Recipe:
Time To Prep: 20 minutes
Time To Cook: 1.5 hours
Ingredients:
1 box of oven ready lasagna noodles
2 bell peppers
1 white onion
1-2 oz of spinach
2 cans of diced tomatoes
1 can of tomato sauce
15 oz of whole milk ricotta
2 cup mozzarella cheese- shredded
1/2 cup parmesan cheese shredded
(1) 6 oz can tomato paste
(1) 15 oz can tomato paste
2 cans of crushed tomatoes
1/2 cup of water
1 large egg
1 tablespoon of olive oil
2 cloves of garlic
Season With Your Heart!
Here are Some Seasoning Suggestions:
3.5 teaspoons of salt separated in two groups: 2 teaspoons and 1.5 teaspoons
A few fennel seeds
2 tablespoons of sugars
3.5 teaspoons of Italian seasoning
1.5 teaspoons of dried basil
1/4 teaspoon of black pepper
2 teaspoons dried parsley
Instructions:
- Preheat your oven to 350 degrees Fahrenheit.
- Chop up your garlic, onion, peppers, wash and dry your spinach and open up your cans.
- Place your olive oil in a pot and heat it up on medium heat.
- Add your onions to the pot and cook until slightly brown.
- Turn your flame down slightly and add in your garlic. Cook until fragrant.
- Add in your tomato sauce, tomato paste, crushed tomato, fennel seeds, sugar, peppers, water and season to your hearts content with some salt, pepper, Italian seasoning, basil, . Mix to combine and simmer for 1/2 an hour. Your flavors will marry and become beautifully delicious… your sauce will cook down slightly.
- While you sauce simmers away, let’s make the ricotta mixture! Grab a medium sized bowl add ricotta, salt, parsley, parmesan, egg. Stir all of your ingredients until they are combined.
- If you have noodles that are not oven ready, boil them until they are al dente. If you have oven ready noodles please skip this step.
- Grab your lasagna pan and layer away: sauce, noodles, ricotta mixture, spinach mozzarella and repeat until you run out ingredients. Always complete your lasagna with a top layer of mozzarella.
- Cover your pan with aluminum foil. Bake in the oven for 40-50 minutes until heated through. Remove aluminum foil and bake for another 15-20 minutes until the top of your lasagna is golden brown.
- Remove from the oven and let it sit for 10-12 minutes before serving.
