The Best Bacon, Cheese and Vegetable Quiche Ever

Vegetable Quiche

This recipe is so easy that someone who has never cooked before can make it. It’s true, my brother borrowed my favorite blue apron and learned how to make a vegetable quiche. We spent the day talking about some fun techniques like how to dice, chiffonade and sauté and we ended up with a beautiful quiche served with sliced apples.

The good thing about a quiche is that it is customizable. Would you like to add ham instead of bacon? Swap out red bell peppers for tomato or add mozzarella and parmesan instead of cheddar… you can do it all. The only thing that you have to make note of is that it your add ins aren’t too watery and your egg to milk ratio is perfect. Once you do that, you will have a perfectly rustic, homemade quiche.

What to Serve With a Quiche:

Breakfast potatoes

Fruit Parfait

Sliced fruit- we used apples

A glass of green tea

The Quiche Recipe:

Ingredients:

4 eggs

1 cup of milk (almond)

1 pie crust

2 slices of bacon-cooked

1 cup of shredded cheddar cheese (A combination of mozzarella and a nice dry parmesan is also delicious)

1/2 teaspoon of Salt

1/2 teaspoon of Pepper

1/2 teaspoon garlic powder

1 pinch of red pepper flakes

1 tablespoon of Olive Oil

1/2 cup of bell pepper (any color)- diced

1/4 cup of onion- diced

1 handful of spinach- about 1 cup

flat leaf parsley- chiffonade it… used for garnish

Time to Prepare: 5 minutes
Time to Cook: 45-55 minutes
Instructions:
  1. Put your oven rack in the middle of your oven.
  2. Preheat your oven to 350 degrees Fahrenheit.
  3. Dice your spinach, onion, bell pepper and bacon. Place your pie crust in your pie pan.
  4. Add 1 tablespoon of olive oil to a pan and sauté the vegetables (not the bacon) until the onion is translucent and the vegetables start to get golden brown. Season with 1/4 teaspoon of salt, garlic powder, red pepper flakes and pepper. Take your vegetables off the heat and place aside until cooled.
  5. Time to make your custard. Whisk together your eggs and milk, season with salt and pepper.
  6. Add your Vegetables, cheese and bacon to your pie crust. Pour your custard mixture on top.
  7. Bake in the oven at 350 for 45-55 minutes. If you notice that your crust is browning and your eggs are not cooked, you can cover your crust with aluminum foil.
